En tot cas, per sumar un any més, m'he fet un pastís a mida: capes de bescuit d'espinacs i llimona alternades amb capes de bescuit de llimona amb llavors de rosella. I, entremig, una bona quantitat de crema de llimona. Per ensamblar-ho tot plegat, la crema de mantega amb llimona justa perquè la torre no s'enfonsi.

[EN] I still have no idea how some people slice cake so perfectly that every single layer looks runway-ready. It must be a well-guarded secret.
Anyway, to celebrate one more trip around the sun, I baked myself a custom cake: layers of spinach and lemon sponge alternating with lemon poppy seed sponge. And in between? A seriously generous amount of lemon curd.
To hold this gorgeous tower together, just the right touch of lemon buttercream — enough to keep it standing tall and proud.

Però de tots els que he fet, el que hi ha sota el mantell de merenga cremada (que és una incorporació més tardana al meu repertori) és el que he repetit més vegades. Segurament vaig començar a fer-lo amb 13 o 14 anys, i se servia a taula en gairebé tots els aniversaris familiars. A casa en dèiem «pastís al whisky», però de whisky només en porta la base de galeta. De fet, en coure-la només en queden els aromes. Per dins, un híbrid entre crema i mousse fet de llet condensada, llimona, rovells i clares a punt de neu. Em sembla que encara és dels meus pastissos favorits del món mundial! (📷 del novembre de 2024 que no havia vist la llum!)

[EN] Over the years, I’ve baked countless cakes and pies. Yet of them all, the one that hides beneath its cloak of burnished meringue (a later flourish in my repertoire) is the one I’ve returned to time and again. I think I first made it at thirteen or fourteen, and from then on it graced the table at nearly every family birthday. At home we called it “whisky cake,” though the whisky appears only in the biscuit crumb crust—and after baking, all that lingers are its aromas. Inside lies a delicate marriage between custard and mousse, conjured from condensed milk, lemon, yolks, and clouds of beaten egg white. Even now, I think it remains one of my dearest cakes in all the world. (📷 from November 2024, until now unseen!)

[CA] Finalment he fet «Lamingtons», un dolç típic [CA] Finalment he fet «Lamingtons», un dolç típic de les terres australianes. Ho tenia a la llista de pendents des de fa mil anys. Els he fet a la meva manera, amb un bescuit de ricotta que m'agrada molt, melmelada de gerds (tal com toca!) i ganache de xocolata del 70 %. Han quedat una mica contundents! 🤭 La propera vegada que ho provi (d'aquí a deu anys, potser!), recordam que tinc massa iniciativa i que m'hauria de limitar a executar les receptes clàssiques! 🤣

[EN] Finally made Lamingtons, a classic treat from Australia. They’ve been on my to-do list for ages! I made them my way: with a ricotta sponge I really love, raspberry jam (as it should be!) and 70% dark chocolate ganache. They turned out a bit on the heavy side! 🤭 Next time I try (in ten years, maybe!), please remind me that I tend to get too creative and should just stick to the classics! 🤣
